MORE ABOUT THE HIGHLAND VILLAGES

One of the best reasons to visit the Highlands is the opportunity to check out the villages.

We’ve already looked at Berrima and Mittagong, so today I thought we’d take a sneak preview of Bundanoon and find out why a visit is another new and different Highland experience.

Bundanoon is about 90 minutes from either Sydney and Canberra – and about 26 kms from Bowral.  There’s a huge variety of things to do – antiques and local craft boutiques, a well known health spa, bus treks, golf, horse riding.

 It’s the southern gateway to the totally spectacular 130 000 hectare Morton National Park.  There’s the stunning Fitzroy and Belmore Falls, scenic walks, picnic spots, a Glow Worm glen and the views go on forever.   We strongly suggest a visit to the Fitzroy Falls Visitor Centre – they have maps and full information on the Park – and you can even start your experience there – it’s just short walk from the Centre to the Lookout over the Falls.

And right through July, Bundanoon is holding their 2008 Winterfest and there’s stuff happening every weekend right through the month.

There’s so much on, it’s hard to know where to start….. but try this
……..street stalls, markets, a Piano Recital by students from ANU, social bike rides, a Christmas in July dinner every weekend at a different venue (and a special Bastille Day dinner on 14 July),  Sourdough Breadmaking Courses, live music, an Art & Design Fair, special movie screenings at the cinema, a Bundanoon Rugby Club Gala day.              More about Winterfest on www.bundanoon.net.au

Southern Highlands Visitors Guide
The Winter edition is now out…..there’s a new Cellar Door Map with indexed locations of the wineries, also a list of all the Markets on in July –---   did you know Simon, there’s markets on every weekend in Highlands –  Bowral Farmers on 12th – which incidentally is growing fast and Southern Highlands Country Fair in Moss Vale on 27 July.

Mulled wine !!!
One of the big hits at our recent Cool Flavours weekend  was  mulled wine served at Berrima’s Blue Metal Vineyards.  So….we managed to convince them to let us have the recipe and it’s now on the home page of our website.    This is a must ‘try’ for the discerning foodie !

And…….there’s been so much interest in our mushrooms, the Mushroom Pie recipe will stay on our site for a few more weeks.

MULLED WINE  -  A Winter bonus

At the recent Cool Flavours Festival in the Highlands, Blue Metal Vineyards in Berrima once again served their ‘secret’ recipe Mulled Wine at their Cellar Door in front of the log fire…. a bit hit it was too !

But….we believe it’s too delicious not to be shared and Blue Metal has kindly allowed us into their secret…….so here it is…..

It’s based on red wines from Blue Metals’ Award winning range….specially the 05 Sangiovese Cabernet. The recipe makes a large batch, just reduce quantities to suit. 

3 bottles 05 Blue Metal Sangiovese Cabernet
2 oranges
6 cinnamon sticks
1 tbls. Cloves
6 star anise
500gm sugar
50 ml. Grand Marnier
500 ml. water
Place all ingredients into large pot or slow cooker and heat SLOWLY DO NOT BOIL
Simmer only to keep hot.

If you haven’t time to mix up a brew, take a visit to Blue Metal Vineyard’s Cellar Door and pick up a Visitors Guide at the Information Centre in Mittagong.  The Guide has an indexed map showing location….and you can try Blue Metal’s other wines at the same time !

MUSHROOM PIE

5 punnets each Li-Sun Mushrooms – Oyster, Swiss Brown, Shiitake, Chestnut, Enoki
30g unsalted butter
50 ml. dry white wine
2 sheets of Puff Pastry (frozen from supermarket is fine)
150g Chicken Liver Pate
1 egg
Fresh Thyme, Sage leaves, salt, pepper

Break mushrooms and fry gently with butter for 2/3 minutes add sprig of thyme and 4 sage leaves, cook gently and add wine and enoki mushrooms, cook till most of the moisture has dispersed.   Cool.
Cut 2 sheets of pastry into a circle and place one on baking paper lined tray.
Cut 2cm strips from off cuts for collar
Make an egg wash with pinch of salt, wash round the outside of the pastry, place 2cm collar of pastry round the outer edge of the pastry circle
Spread pate over the base, inside the collar
Season mushrooms
Make mound of the mushrooms over the pate, firm down
Egg wash the collar
Place 2nd sheet of pastry over
Press edges down well to seal, cut off excess.
Egg wash the entire pie and score a spiral pattern with sharp knife into the pastry, do not cut through.
Bake at 200c for approx. 30/40 minutes.
Serve warm or cool with salad.
